做法:春笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干的(de )时(shí )候加入(rù )盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅盖焖。
