做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油(yóu )翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
