做法(fǎ ):春(chūn )笋切成片后加(jiā )少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
