做法:春笋切(qiē )成片后(hòu )加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少(shǎo )量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火(huǒ )煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
