做(zuò )法(fǎ ):洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水(shuǐ )把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好(hǎo )的鲫鱼和(hé )其他材料,武火煮沸(fèi ),转(zhuǎn )中小火煲一个半(bàn )小(xiǎo )时(shí ),下盐(yán )调味即可品尝。
