做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖。
