做(zuò )法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
