做法:春笋切成(chéng )片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩(yǎn )住春笋(sǔn ),盖(gài )上锅(guō )盖大(dà )火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
