做法:洗净宰好鲫鱼,洗净淮(huái )山(shān )和薏(yì )米(mǐ )。用清水把(bǎ )陈(chén )皮(pí )泡软(ruǎn ),拍裂一(yī )小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜块(kuài )在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品尝。
