做法:春笋切成(chéng )片(piàn )后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
