做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
