做(zuò )法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大(dà )火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上锅盖(gài )焖(mèn )。
