做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清(qīng )水,放(fàng )入煎煮好的鲫鱼(yú )和(hé )其(qí )他(tā )材(cái )料,武火煮沸,转中小火煲一个半小时,下(xià )盐调(diào )味即可品尝。
