做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺(sháo )油(yóu ),待油六成(chéng )热下鱼,煎至微黄。煮沸瓦(wǎ )煲里(lǐ )的清(qīng )水,放(fàng )入(rù )煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下(xià )盐调味即可品尝。
