做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后(hòu )转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅(guō )盖焖。
