做法:春笋切成片后(hòu )加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入(rù )少量清水半掩住春笋(sǔn ),盖上锅(guō )盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的(de )时候加入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖上(shàng )锅盖焖。
