做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖(gài )上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
