做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
