做法:春(chūn )笋切成(chéng )片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
