做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段翻(fān )炒(chǎo )1分钟左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖焖(mèn )。
