做法:春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水(shuǐ )浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入(rù )生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到(dào )水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
