做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩(yǎn )住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
