做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
