做法:春笋切成片后(hòu )加(jiā )少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上锅(guō )盖大(dà )火(huǒ )煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
