做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
