做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋(sǔn )、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
