做(zuò )法:春笋切成(chéng )片(piàn )后加少(shǎo )许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
