做法:春(chūn )笋切成片后(hòu )加少许盐捞(lāo )出后用清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝(háo )油(yóu )翻(fān )炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
