做法:春笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候(hòu )加入(rù )盐,翻炒均(jun1 )匀(yún )稍收汁时盖(gài )上锅盖(gài )焖。
