做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清(qīng )水把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺(sháo )油(yóu ),待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲(bāo )里(lǐ )的清(qīng )水,放(fàng )入煎煮好的鲫(jì )鱼和其(qí )他材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味(wèi )即可品尝。
