做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右(yòu )。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
