做法:春笋切成片(piàn )后加少许盐捞(lāo )出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒(chǎo )均匀(yún ),加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
