做法:春笋切(qiē )成片后(hòu )加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
