做法:洗净宰好(hǎo )鲫鱼(yú ),洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅,用(yòng )姜块在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和其他材料(liào ),武火(huǒ )煮沸,转中(zhōng )小火煲一个半小时,下盐(yán )调味即可品尝。
