做法:春笋切(qiē )成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量(liàng )清(qīng )水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
