做(zuò )法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝(háo )油(yóu )翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍(shāo )收汁时盖上锅盖焖。
