做法:春笋切成片后(hòu )加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
