做法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
