做法:洗净宰好鲫鱼,洗(xǐ )净淮山(shān )和(hé )薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎(jiān )煮好的(de )鲫鱼和(hé )其他(tā )材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一个(gè )半小(xiǎo )时,下盐调味即可品尝。
