做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟左右(yòu )。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大(dà )火(huǒ )煮开后转中火(huǒ )。煮到水快熬(áo )干(gàn )的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
