做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后(hòu )用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖焖。
