做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅(guō )盖焖。
