做(zuò )法(fǎ ):春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
