做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待油六成(chéng )热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲一(yī )个半小时,下盐(yán )调味即可品尝。
