做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡(pào )软,拍裂(liè )一小块姜,热锅,用姜(jiāng )块在(zài )锅上(shàng )擦一遍,放两勺油,待(dài )油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中(zhōng )小火(huǒ )煲一个半(bàn )小时(shí ),下盐调味即可品尝。
