做法:洗净宰好鲫鱼(yú ),洗(xǐ )净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小块(kuài )姜,热锅,用姜(jiāng )块在(zài )锅上擦(cā )一遍,放两勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火(huǒ )煲一个半小时(shí ),下(xià )盐调味即可品(pǐn )尝。
