做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切(qiē )成(chéng )段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
