做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一(yī )小(xiǎo )块姜(jiāng ),热(rè )锅(guō ),用姜块在锅上(shàng )擦(cā )一遍,放两勺油(yóu ),待油(yóu )六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放(fàng )入煎(jiān )煮好的鲫(jì )鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小时,下盐调味(wèi )即可品尝。
