做法(fǎ ):洗净(jìng )宰好(hǎo )鲫(jì )鱼(yú ),洗净淮(huái )山和薏米。用清水把陈皮泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的(de )清(qīng )水,放(fàng )入煎煮好的鲫(jì )鱼和其(qí )他材料,武(wǔ )火煮沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品尝。
