做法(fǎ ):春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收(shōu )汁时盖上锅(guō )盖焖。
